Festive Chutneys and Gifts: Chilli, Pineapple and Cranberry Chutney

Only 2 sleeps till Christmas and I am still making home made gifts to give to a few friends. Do you have any last minute gifts that you have to get? Then why not give this ago because its simple, easy and best of all home made. Jars of Chutney’s add such a lovely touch to food hampers, you can personalise your hampers in any way you like or give these jars individually. This combination of tangy cranberries, fiery hot chillies, juicy fresh pineapple and crackling cumin is a blend that will waken your taste buds. Spread it on a sandwich or serve with cheese and crackers, the flavours left on your palate will be big and bold. Go on treat your family and friends to a selection of home made chutneys that they can devour.

Chilli,Pineapple and Cranberry Chutney

Preparation time:5-10 minutes
Cooking time:35 minutes

Ingredients:

1 Tbsp oil
3 Tbsp Cumin seeds
200g Fresh cranberries
200g Fresh pineapple cut into small chunks
4 Green chillies chopped (or can add to personal taste)
210g Sugar
2 Tbsp Cider vinegar
Salt to taste
3.5 Cups water

Method:
1. Take a medium sized non stick pan and place it on your hob, pour the oil into the pan and heat on medium heat.

2. Add the cumin seeds, once they start to crackle add the cranberries, chillies, pineapple, sugar and cider vinegar. Mix it all until well incorporated.

3. Once the ingredients have been mixed together, add the water and cook on medium heat for 30-35 minutes stirring frequently. Once the water evaporates and chutney starts to thicken, add salt to taste.

4. Remove off the heat and let the chutney cool down to a temperature that is safe to handle. Spoon the chutney into sterilised jars.

Apple Chutney– this one is my all year round favourite and anyone who receives this will always ask for more, gorgeous home grown or bramley apples gently spiced with cinnamon, cardamom, clove and a hint of chilli. Use this chutney as a spread, dip, serve with cheese or as an accompaniment to meals
