Home blend Spice Mix: Achari Masala

When it comes to cooking or even baking, I am one of those who loves to make my own spice blends at home, roasting whole spices and grinding releases flavours, oils and tastes that are so exhilarating. Adding these home made spice blends to your cooking really enhances the flavours of your dish. I will be sharing a variety of my personal home blend spice mix with you so you can enjoy them in your cooking.

Achari Masala:

A delicious blend of spicy, aromatic, sweet, earthy spices that can be added to many vegetable dishes. Can also be used as a marinade base mixed with yoghurt to turn vegetables into tasty kebabs.

Ingredients:

1 Tsp Cumin seeds
1/2 Tsp Coriander seeds
1/2 Tsp Fennel seeds
1/4 Tsp Fenugreek seeds
1/2 Tsp Black peppercorns
1 Tbsp Kalonji/nigella seeds
1.5 Tsp Mango powder
1/2 Tsp Red chilli powder
1 Tbsp Turmeric powder
1 Long piece Cassia- broken into smaller pieces
1/2 Tsp Cardamom powder
1/4 Tsp Nutmeg

Method:

1. In a pan on low heat, roast coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, cassia sticks and black peppercorns.

2. In a pestle and mortar grind the roasted spices until fine. Alternatively you can grind them in a blender.

3.Mix these with all the rest of the spices. You will have enough to jar it.

  1. I’m going to make some of this and store until I get to make some kebabs. Subbing cassia for cinnamon though as I am anti cassia. πŸ˜‰ I suspect this will be very nice as all your stuff is. Thanks for sharing.

    1. That’s brilliant Tony, I made some and lasted me for quite a few dishes. Keep your eyes peeled you’ll see a recipe very soon using this spice :). Anti cassia? Lol you can substitute for sure and thank you for your lovely feedback πŸ™‚

      1. You can marinade the chicken in this spice mix and yoghurt and leave for an hour or so before cooking it. Keep your eyes peeled for a recioe im publishing tomorrow using this spice πŸ˜‰
