Free from Friday’s: Baked Chocolate Tortilla’s with Cinnamon infused fruity salsa


Have you ever thought about a”Dessert Party” where nothing but a variety of desserts are served? Hmm well I dreamt of it and it was so surreal, I saw myself surrounded by wonderful family and friends and trays of delicious cakes, pastries, bakes, chocolates and fruit. Yes this dream turned into thoughts when I started questioning why is it that whenever we mention chocolate and desserts we automatically think Sinful? Earlier in the week when breakfast was a big bowl of mixed fruits such as mango, papaya, strawberries, raspberries and blueberries with a sprinkle of lime and cinnamon my palate was craving for shavings of dark chocolate. Well we have to satisfy our senses and so a bit of dark chocolate was grated into this fruit mix and to my surprise the flavours blended so well. From this the idea of ” Chocolate tortilla’s with a fruity salsa ” appeared and shortly was created and shared amongst my wonderful neighbours.  This recipe is sure to wow anyone from kids to adults, it’s also a healthier option as the nachos are baked, pure cocoa powder has been used and very little sugar. If the wonderful Sunny days are to embrace us for a while then this will be making a regular appearance on our menu at home, works well as a light snack too 🙂


 Baked Chocolate Nacho’s with Cinnamon infused fruity salsa- Dairy free, Egg free    

Chocolate Tortilla’s

Preparation time: 25 minutes
Cooking time: 20 -30 minutes
Baking time: 10 minutes

Makes: 8-10 tortillas dependent on size


200g Plain flour Sifted plus extra for rolling
30g Cocoa powder sifted
1 Tbsp Icing sugar sifted
1/2 Tsp Baking powder
135ml water
45ml Vegetable oil plus extra for brushing


1. In a bowl mix all the dry ingredients together, pour in oil and water and bring together. Knead into a dough. Cover and let the dough rest for 15 minutes.
2. Once dough has rested, knead it a couple of times and divide into 8 – 10 equal size balls. Keep them covered to prevent them from drying out.
3.Heat a non stick frying pan or roti pan on medium flame. Lightly flour your work board and rolling pin, take a piece of the dough and roll it out to about 6 inches in diameter.
4. Place the rolled out tortilla onto the hot pan and cook for approx 1 minute, flip over and cook for about 30 seconds.
5. Continue with this step till all the dough pieces have been used.
6. Pre heat the oven to 220 degree c or 200 c for fan assisted.
7. Using a pizza cutter slice the flour tortillas, arrange them on baking tray, lightly brush with oil and bake in the oven for 5-10 minutes until crisp. Take extra care not to burn them whilst baking or else they will taste bitter.


Fruity Salsa


1 Fibreless mango
150g Strawberries
125g Blueberries
1 Tsp lime juice
Pinch of salt
1/4-1/2 Tsp ground cinnamon



1. Chop all the fruit finely, stir in the lime juice, cinnamon powder and salt.
2. Serve this delicious fruity salsa with crispy chocolate tortillas. Oh and you can dust your chips with a sprinkle of icing sugar 😉
