Yay it’s Friday, the sun’s shining, patio doors wide open, birds chirping and kids playing outdoors, you have to love and embrace every bit of this wonderful weather. Talking of weather what has been your temptation to cool down in this heat? Ice cream, ice lollies, cocktails, mocktails, cold beer or Lassi? Free From Fridays this week brings to you a deliciously thick and creamy Indian yogurt based drink that has been blended with super delicious mango and gently spiced with cardamom. A perfect drink to not only quench your thirst but to cool and refresh you. It’s a winner all round. So do you ask what it’s free from? Well its dairy free, soya free and gluten free…. 🙂 who said you can’t indulge in luxuries just because you have an allergy hey. The lassi has been made using natural coconut yoghurt produced by The Coconut Collaborative who kindly gave me some of their yoghurt to sample and i’m really impressed. The yoghurt is quite thick and creamy so blends really well in a drink but also gives a creamy texture to a curry. These yoghurts are available in Waitrose or you can use alternative. I’d also like to add that this is my 100th blog post since I started my blog so cheers and thank you all for being such wonderful readers and followers, you continue to fuel my passion and inspire my creativity :).
Coconut and Mango Lassi- Dairy free, soya free, gluten free
Preparation time: 10-15 minutes
240g Coconut yoghurt ( The coconut collaborative natural) or alternative
350g Tinned Alphonso Mango pulp- can use fresh mango as well as long as it’s sweet and fibreless.
1 Tsp agave nectar or more if you prefer it sweet
1/4 heaped Tsp of ground cardamom
3-4 fresh mint leaves
1. In a blender add all the above ingredients except from mint leaves. Blend for 1-2 minutes until all ingredients have combined well. At this stage you can taste and add more agave or alternative if required.
2. Pour into tall glasses, garnish with roughly chopped mint and serve with or without ice.
